Everything is good fried, even the slippers. Try fried courgette flowers! Delicious, decorative and very elegant starter in weddings and special occasions. You can fry any vegetable you like. In July it’s courgette season in Tuscany, and that is what we are having! You can also fry the yellow courgette flowers, that are large and strong, perfect to hide a peace of pecorino cheese inside. What makes courgette flowers such a lovely dish, is that they keep the pretty flower shape, even after the frying and look gorgeous on a plate or in a rustic paper cone.

Ingredients: Pumpkin or courgette flowers, courgettes, aubergines, onions, carrots, cauliflower, any vegetable you like.

What you do: Wash the vegetables – Prepare dough – Fry. Preparation time (for 6-8 people): 30/40 minutes.

1. Wash and cut the vegetables in slices, nice finger food size. Dry the flowers and vegetables well on a cotton towel.

2. Prepare the dough: Wheat flour, water (sparkling better, or use light beer), add flour slowly, mix until the dough gets creamy and sticks to the vegetables. A pinch of salt, a pinch of sugar.

3. Warm the vegetal oil in a deep pan until it’s boiling.  (Sunflower oil, peanut oil, any vegetable oil is good).

4. Add the vegetables, one by one, turn around when they get colour, place on a paper towel to drip. (Be careful with the hot oil)

5. Serve on a plate or in a rustic paper cones.
